  • 描述: 本論文之所以探討夜市發展的歷史變遷,是因為夜市的存在不僅是許多人生活的一部份,與區域的發展也有高度的相關。本論文以位於台南市東區、南區、北區、中西區、安平區、安南區的夜市為研究對象,在時間的分段上則分為民國60年代以前、民國60年代、民國70年代、民國80年代、民國90年代到現在,共五個階段探討夜市的存在與台南歷史的關聯。當中不僅記載已消失的夜市,對於現在各區域仍存在的夜市,也加以記錄現況並分析探討未來發展的限制。研究結果如下: 日治時期,對於攤販的流動管理相當嚴格,在大馬路旁禁止設攤,對於肩挑負販者,會加以驅趕甚至沒收攤子,因此流動攤販難聚集「結市」,自然難形成「夜市」,在日治時期著名的夜市為日人設立的「沙卡里巴」,當時熱鬧滾滾。 戰後,日人退出台灣,一些做小生意的攤販紛紛出現街頭,甚至在交通要道上聚集成市,當時的東門城夜市、東門圓環夜市、小西門夜市、西門圓環夜市都是因此產生。 民國70年代是台南市夜市的重要分水嶺,占據道路兩旁營業的夜市帶來許多問題。迫使市府驅趕所有位於道路兩旁的夜市,並規定重要道路不可設攤,因此為空地型態的夜市開啟一扇大門。 民國70、80年代,臺灣經濟起飛,夜市生意很好,每晚營業額超過萬元。民國80年代後期景氣變差,夜市的黃金歲月慢慢消失。 民國90年代由於媒體的推波助瀾,出現觀光旅遊化夜市的型態,其中以花園夜市最負盛名。其他區域的中、小型夜市的人潮因受景氣影響,生意好壞差異大。 在不景氣的環境之下,夜市如何開拓出屬於自己獨特的道路,將是夜市經營者的一大考驗。
    The purpose of this study is to explore the historical transition of night market development. This is not only the existence of night market is a part of many people’s life, but also highly related to the region development. This study is to discuss the night market in different districts in Tainan city, which includes East district , South district, North district, Central and West district, Anping district, and Annan district. This study is divided into five timeframes: before the 60s, the 60s, the 70s, the 80s, and the 90s to the present. They are to explore the connection between the existence of night market and the history of Tainan city. This study is not only to record the vanished night market, but also to analyze the limitation of future development for the existing night market in difference districts. The findings are as follows: At the time Japanese governed Taiwan, it is quite strict for the street stalls management. It was forbidden to have the booth on the street. For the peddlers, the governor will drive them away and dispossessed their stands. Therefore, the street stalls are difficult to get gather to become the night market. The famous night market “sand card Reba”set up by the Japanese was hustle and bustle at that time. After World War II, the Japanese people withdrew from Taiwan, some street stalls appeared on the street. They gathered on the main roadways in the city, the East Gate night market, the East Gate Circle night market, the Small West Gate night market, and the West Gate ring night markets were formed at that time. The 70s was an important divide about Tainan night market. The stands on the roadways caused many problems. The government had to drive away the stands and had a policy for not having stands on the main roadways. This was to open a door for night market to be set up in the open ground. In the 70s and 80s, the economic in Taiwan took off, the night market business was prosperous, the sales were over NT 10,000 per night. In the late 80s, the Taiwan economic went down, the golden time of night market business was vanished gradually. In the 90s, the tourism night market appeared because of the media. The Garden night market is the most famous one in Tainan. The business for the medium and small size of night markets in different districts was impacted by the economic. The sales have big difference. Under the economic decayed environment, how does the night market develop its own unique path will be a big text for night market operator.
