描述: 飲食題材的書寫，隨著解嚴政策的實施、西方文藝思潮的傳入以及社會文化的轉變等等因素，漸漸呈現出紛雜、多元的面貌。其中焦桐以詩人、散文家、美食家、雜誌創辦者等多重身份進入飲食書寫領域時，其文本不僅展現了與前期作家截然不同的風格，更將飲食書寫帶入了學術研究的專業領域。本篇論文以焦桐的飲食文本為研究對象，期望能藉由對文本的分析，釐清從唐魯孫以來的飲食書寫到了焦桐所處的時代環境中，在社會文化、時代思維上究竟產生了如何的轉變？而焦桐的文本又在歷史長河裡展現出何樣的風貌與特色？本論文分做五章論述。首先說明個人研究動機、研究範圍的界定以及研究方法。接著從歷史溯源的角度探討現代飲食書寫的流變與焦桐飲食經驗，主要梳理民國三十八年政府來台之後的飲食書寫發展概況，在年代分期上將分成三期討論，同時整理焦桐個人成長過程中不同時期的飲食經驗以及對飲食書寫的傳播。探究時代背景之後，接著進入文本分析的部分，首先在飲食詩 —《完全壯陽食譜》的研究上，著重探討文本中的戲仿策略，包含形式戲仿的溯源、目的、功能以及在內容上對政治、情色戲仿的意義，期望藉由釐清文本中的主題思想以及話語策略，而能真正閱讀到詩作之後的真實意涵。而對於飲食散文 —《暴食江湖》、《臺灣味道》的分析，將藉由知性書寫的探討、主題內容、書寫策略以及飲食美學的建立不同方向來觀看焦桐筆下的飲食意識與時代變遷。最後希望通過對焦桐飲食文本的研究分析，以期能總整理焦桐飲食書寫的風格、特色與歷史定位。
The writing style of diet has gradually become a field of complication and diversity with the end of the military curfew, the spread of western literary thoughts, and the transformation in social culture. As a poet, essayist, gastronome, and the magazine founder, Jiao Tong, in particular, had stepped into the diet writing with his multiple statuses. Compared with authors of the earlier stage, Jiao Tong’s texts not only demonstrated distinguished style, but uplifted the diet writing into a professional academic filed. The present study, investigating and analyzing Jiao Tong’s diet writing texts, aimed to decipher changes of the society, culture, and ideology from Tan Lu-Sun to Jiao Tong. What are the characteristic features of texts that Jiao Tong possesses? The present study contained five parts. To begin with, background of the study, the operational definition of research range, and research methodology were illustrated. Then, the researcher explored the evolvement of modern diet writing and Jiao Tong’s diet experience in terms of historical trace. The researcher first portrayed the developmental diet writing phenomenon and the transition of diet writing of postwar Taiwan after 1949, followed by Jiao Tong’s diet experience of different stages and its impact on the spreading of diet writing. After the historical background came the text analysis. In the poem entitled 《Erotic Recipes: A Complete Menu for Male Enhancement》, the researcher drew the readers attention to the imitation strategies of the text, including the origin, purpose, function, and meaning upon politics and imitation. It is hoped that readers could really learn the true meaning embedded in the texts. The latter part of the research dealt with Jiao Tong’s diet ideology and developmental transition through various aspects, including probing into the intellectual writing, analyzing the main topics, the writing strategies, and the establishment of diet esthetics. In Conclusion, it is expected that through the analysis of Jiao Tong’s diet writing texts, readers can better comprehend Jiao Tong’s diet writing style, characteristics, and historic orientation.
